Brewing the Kombucha

    Prepare the Sweet Tea

    Boil 4 cups of water in a large pot. Once boiling, remove from heat and add 1 cup of granulated sugar, stirring until dissolved. Add the 4 black tea bags and allow to steep for 10-15 minutes.

    Cool the Sweet Tea

    After steeping, remove the tea bags and let the sweet tea cool down to room temperature. This is essential to prevent killing the SCOBY.

    Combine Ingredients

    Once the sweet tea has cooled, pour it into a large glass jar (at least 1-gallon capacity). Add 1 cup of starter tea and gently slide the SCOBY into the jar.

    Cover and Ferment

    Cover the jar with a clean cloth or coffee filter secured with a rubber band to allow airflow while keeping out dust and insects. Place the jar in a warm, dark place (around 70-85°F or 21-29°C) for 7-14 days, depending on your taste preference.

Flavoring and Bottling

    Taste Test

    After 7 days, taste the kombucha daily until it reaches your desired balance of sweetness and tartness.

    Prepare for Flavoring (Optional)

    If you wish to add flavors, prepare your chosen ingredients (like grated ginger, fruit puree, or herbs) while the kombucha is fermenting.

    Bottling

    Once the kombucha reaches your preferred flavor, remove the SCOBY and set it aside in a clean bowl. Strain the kombucha into bottles, leaving some space at the top for carbonation.

    Add Flavorings (Optional)

    If flavoring, add your chosen ingredients directly to the bottles before sealing.

    Second Fermentation

    Seal the bottles tightly and leave them at room temperature for another 3-7 days to carbonate. Check daily to prevent over-carbonation.

    Refrigerate and Enjoy

    Once carbonated, refrigerate the bottles. Serve the kombucha chilled on draft or pour into glasses. Enjoy your homemade Booch!
