Preparation of Base Ingredients

    In a large pot, bring 4 cups of filtered water to a boil. Once boiling, remove from heat and add 4 cups of green tea. Allow it to steep for about 5-7 minutes.

    While the tea is still warm, add 1 cup of cane sugar to the brewed tea. Stir until fully dissolved.

    Let the sweetened tea cool down to room temperature. Once cooled, add 1 cup of active kombucha culture and mix gently.

Flavoring the Booch

    Incorporate 2 tablespoons of grated fresh ginger, 1 cup of pineapple juice, 1 tablespoon of lime juice, and 1 cup of coconut water into the cooled tea mixture. Stir well to combine all flavors.

Fermentation Process

    Ferment the Mixture

    Pour the entire mixture into a clean glass jar or fermentation vessel. Cover it with a cloth and secure it with a rubber band. Let it sit in a warm, dark place for 5-14 days, depending on the desired level of fermentation.

    After fermentation, strain the kombucha to remove any solids. Pour the Big Island Booch into glasses filled with ice, garnish with fresh mint leaves, and lime slices to taste. Serve immediately and enjoy!
