Preparation of the Coconut Custard

Mix Ingredients
In a mixing bowl, whisk together the coconut milk, eggs, vanilla extract, cinnamon, and a pinch of salt until well combined.

Let it Rest
Allow the coconut custard mixture to rest for about 10 minutes to thicken slightly.
Preparing the Walnuts

Candy the Walnuts
In a skillet, melt the butter over medium heat. Add the walnuts and brown sugar, stirring constantly until the sugar has melted and the walnuts are coated, about 5 minutes. Remove from heat and set aside.
Cooking the French Toast

Dip the Bread
Preheat a non-stick skillet or griddle over medium heat. Dip each slice of sourdough bread into the coconut custard mixture, allowing it to soak for about 20 seconds on each side.

Place the soaked bread slices onto the preheated skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

While the French toast is cooking, slice the apple bananas into rounds.
