    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped yellow onion, diced carrots, and diced celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Pour in Broth and Add Potatoes

    Pour the vegetable broth into the pot and add the cubed potatoes. Bring the mixture to a boil over high heat.

    Incorporate Tomatoes and Herbs

    Once boiling, reduce the heat to low. Stir in the canned diced tomatoes, chopped kale, dried oregano, and dried thyme. Season with salt and black pepper to taste.

    Simmer the Soup

    Cover the pot and let the soup simmer for about 25-30 minutes, or until the potatoes are tender and the flavors meld together.

    Ladle the zuppa into bowls, and top with grated Parmesan cheese if desired. Serve hot.
