Cooking Instructions

  1. 1

    Prepare Ingredients

Start by gathering all your ingredients. Rinse the black beans under cold water if using canned beans. Chop the onion, bell pepper, and garlic finely.

  2. 2

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until softened, then add the minced garlic and cook for another minute.

  3. 3

    Add Spices

Stir in the chili powder, cumin, salt, and black pepper. Mix well and cook for an additional minute to toast the spices.

  4. 4

    Combine Main Ingredients

Add the black beans, diced tomatoes (with their juice), and vegetable broth to the pot. Stir everything together until well combined.

  5. 5

    Simmer the Chili

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, stirring occasionally.

  6. 6

    Finish and Serve

After simmering, taste the chili and adjust seasoning if necessary. Stir in chopped cilantro just before serving. Serve hot in cups or bowls with a wedge of lime on the side.
