Gulf Seafood Gumbo

    Cook the Sausage

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the andouille sausage and cook until browned, about 5 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped bell pepper, onion, and celery. Sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Add Tomatoes and Broth

    Add the canned diced tomatoes (with juices) and chicken broth to the pot. Stir to combine.

    Season the Gumbo

    Stir in the Old Bay seasoning, cayenne pepper, bay leaves, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Gumbo

    Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

    Add Seafood

    After 30 minutes, add the shrimp and crab meat to the pot. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Finish and Serve

    Remove bay leaves from the pot. Stir in the sliced green onions and chopped parsley. Serve the gumbo over cooked white rice in cups or bowls.
