Prepare the mussels
Rinse the mussels under cold water, scrubbing off any dirt or barnacles. Remove beards if necessary.
Add wine
Pour in the dry white wine and bring to a simmer, allowing it to reduce slightly.
Cook the mussels
Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes, or until all mussels have opened.
Make the sauce
Remove the mussels with a slotted spoon, leaving the liquid behind. Stir in the heavy cream and Dijon mustard, cooking for another 3-5 minutes until thickened. Season with salt and pepper.
Combine
Return the mussels to the pot, tossing them in the sauce until well coated. Stir in chopped fresh parsley.
Serve
Serve the mussels in bowls with toasted bread on the side for dipping into the sauce.
