Method

Preparation

  1. 1

    Prepare the Potatoes

Peel the russet potatoes and cut them into thick fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

  2. 2

    First Cook

Drain the fries and pat them dry. Heat vegetable oil in a large pot to 300°F (150°C). Fry the potatoes in batches for about 5-7 minutes until they are soft but not browned. Remove and drain on paper towels.

  3. 3

    Second Cook

Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for about 3-5 minutes until they are golden brown and crispy. Remove and drain on paper towels. Season with salt.

  4. 4

    Make the Truffle Aioli

In a bowl, combine mayonnaise, truffle oil, minced garlic, lemon juice, and salt to taste. Mix well until smooth.

  5. 5

    Serve

Place the fries on a serving plate, drizzle with truffle aioli, sprinkle with grated Parmesan cheese and chopped chives. Serve immediately.
