    Prepare the Asparagus

    Preheat the oven to 425°F (220°C). Trim the tough ends off the asparagus and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Toss to coat.

    Roast the Asparagus

    Roast the asparagus in the preheated oven for about 15-20 minutes, or until tender and slightly browned, tossing halfway through.

    Make Brown Butter Béchamel

    In a saucepan over medium heat, melt the butter until it starts to brown. Add the chopped shallots and sauté until translucent. Stir in the flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk, cooking until thickened. Season with salt and pepper.

    Fry Onion Rings

    In a frying pan, heat oil over medium-high heat. Dip onion rings in batter and fry until golden brown. Drain on paper towels.

    Plate and Serve

    Place roasted asparagus on a plate, drizzle with brown butter béchamel, top with crispy onion rings, and finish with a splash of sherry vinegar.
