Preparation and Cooking

Marinate the Pork Belly
In a bowl, combine soy sauce, brown sugar, sesame oil, gochujang, minced garlic, and grated ginger. Mix well. Add the pork belly and coat it thoroughly. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare Mushroom Fried Rice
In a large skillet, heat vegetable oil over medium heat. Add sliced mushrooms and sauté until golden brown. Add cooked rice and stir-fry for about 5 minutes. Season with salt and pepper. Stir in chopped green onions, and cook for an additional minute. Remove from heat.

Cook the Pork Belly
Preheat the grill or a skillet over medium-high heat. Remove the pork belly from the marinade and grill or pan-fry until crispy and cooked through, about 5-7 minutes on each side. Let it rest for a few minutes before slicing.

Assemble the Dish
On a serving plate, place a scoop of mushroom fried rice. Top with sliced pork belly, sprinkle with crispy garlic, and garnish with additional chopped green onions. Serve with nori sheets on the side for wrapping.
