    Prepare the Potatoes

    Boil the potatoes in salted water until fork-tender. Drain, let cool, and then peel and chop into small cubes.

    Make the Potato Salad

    In a large bowl, combine the chopped potatoes, Kewpie mayo, rice vinegar, sugar, salt, and black pepper. Mix gently until well combined.

    Prepare the Octopus

    If using frozen octopus, thaw it first. In a large pot, bring water to a boil and add the octopus. Boil for about 30 minutes until tender. Remove and let cool.

    Grill the Octopus

    Heat a griddle pan over medium-high heat and brush it with olive oil. Cut the cooled octopus into manageable pieces and grill for about 3-4 minutes on each side until charred.

    Roast the Shishito Peppers

    In the same griddle pan, add the shishito peppers and grill for about 5-7 minutes until blistered and tender. Season with salt.

    Serve

    Plate the griddled octopus alongside the potato salad and roasted shishito peppers. Sprinkle furikake over the potato salad for garnish.
