    Prepare the Pickles

    Drain the pickles and pat them dry with paper towels. This helps the coating stick better.

    Make the Breading

    In a shallow bowl, mix together cornmeal, all-purpose flour, cornstarch, salt, and black pepper. In another bowl, whisk together eggs and buttermilk.

    Coat the Pickles

    Dip each pickle slice into the egg mixture, allowing excess to drip off, then dredge in the cornmeal mixture, ensuring they are well coated.

    Heat the Oil

    In a large skillet or deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Pickles

    Carefully place the coated pickles into the hot oil in batches, frying for 2-3 minutes on each side or until golden brown and crispy.

    Drain and Serve

    Remove fried pickles from the oil and place them on paper towels to drain excess oil. Chop scallions and sprinkle over the fried pickles before serving.
