    Prepare the Beef Tongue

    Place the beef tongue in a large pot and cover with water. Bring to a boil, then reduce heat to a simmer. Cook for about 3-4 hours, or until tender. Remove tongue and let it cool slightly before peeling off the skin.

    Make the 1000 Island Dressing

    In a bowl, combine mayonnaise, ketchup, dill pickles, yellow mustard, Worcestershire sauce, salt, and pepper. Mix well and adjust seasoning to taste.

    Assemble the Sandwich

    Thinly slice the cooked beef tongue. On a slice of rye bread, layer with beef tongue, pickled cabbage, a generous spoonful of 1000 island dressing, and a slice of Swiss cheese. Top with another slice of rye bread.

    Brulee the Swiss Cheese

    In a skillet over medium heat, grill the sandwich on both sides until golden brown. Once flipped, cover with a lid to help melt the Swiss cheese. Optionally, use a kitchen torch to brulee the cheese for a crispy top.

    Cut the sandwich in half and serve hot with extra 1000 Island dressing on the side.
