Breakfast

Rinse the quinoa under cold water. In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy. Set aside.

Prepare the Quinoa

In a bowl, mix olive oil, minced garlic, lemon juice, chopped rosemary, salt, and black pepper. Add chicken breasts and marinate for at least 30 minutes.

Marinate the Chicken

Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side or until fully cooked and juices run clear. Let it rest for a few minutes before slicing.

In the same skillet, add a bit more olive oil if needed. Sauté the seasonal vegetables for 5-7 minutes until tender-crisp.

In a mixing bowl, combine the ground beef with salt and black pepper. Mix well and form into four equal patties.
