1. Prepare the Quinoa

In a bowl, mix olive oil, minced garlic, lemon juice, chopped rosemary, salt, and black pepper. Add chicken breasts and marinate for at least 30 minutes.
3. Cook the Chicken
Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side or until fully cooked and juices run clear. Let it rest for a few minutes before slicing.
4. Sauté the Vegetables
In the same skillet, add a bit more olive oil if needed. Sauté the seasonal vegetables for 5-7 minutes until tender-crisp.
5. Serve
