Prepare the Shallots
Preheat your oven to 400°F (200°C). Cut the shallots in half and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt. Roast for about 20-25 minutes, or until they are golden and tender.

Grill the Broccolipine
While the shallots are roasting, prepare the broccolipine. Toss the broccolipine with the remaining 2 tablespoons of olive oil, salt, and black pepper to taste. Preheat a grill or grill pan over medium-high heat. Grill the broccolipine for about 5-7 minutes, turning occasionally, until they are charred and tender.

Make the Vinaigrette
In a small bowl, whisk together the red wine vinegar, 1 tablespoon of olive oil, and a pinch of salt. Adjust seasoning as necessary.

On a serving platter, arrange the grilled broccolipine, top with roasted shallots, and drizzle with the red wine vinaigrette. Garnish with bonito flakes and thin slices of lardo.
