    Cook the Meats

    In a large pot, combine the pork shoulder and pork liver. Cover with water, bring to a boil, and then reduce to a simmer. Cook for about 1.5 to 2 hours, or until the meats are tender.

    Remove the meats from the pot and let them cool slightly. Reserve the cooking liquid. Once cool, grind the meats using a meat grinder or food processor.

    In a separate pot, bring the reserved cooking liquid to a boil. Gradually stir in the cornmeal, then add the ground meats, chopped onion, salt, black pepper, thyme, and sage. Mix well until fully combined.

    Pour the mixture into a greased loaf pan. Smooth the top and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours or until set.
