Instructions

  1. 1

    Prepare the Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until they begin to soften.

  2. 2

    Add Mushrooms and Spinach

Add the sliced mushrooms and fresh spinach to the skillet. Continue to sauté for another 3-5 minutes until the mushrooms are tender and the spinach has wilted.

  3. 3

    Beat the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

  4. 4

    Combine and Cook

Pour the beaten eggs over the sautéed vegetables in the skillet. Reduce heat to low and cook for 5-7 minutes until the edges start to set.

  5. 5

    Add Cheese and Finish Cooking

Sprinkle shredded cheddar cheese on top of the omelet. Cover the skillet with a lid and let it cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully set.

  6. 6

    Serve

Slide the omelet onto a plate, cut it in half, and serve warm.
