Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thick waffle fry shapes using a crinkle cutter or a knife. Aim for approximately 1/2 inch thick.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

In a large, deep pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature.

Carefully add a batch of the dried potato waffle fries into the hot oil. Fry for about 4-5 minutes or until they are golden brown and crispy. Do not overcrowd the pot; fry in batches if necessary.

Once cooked, remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and your choice of seasonings (paprika, garlic powder, onion powder, black pepper).
