Method

Preparation

  1. 1

    Season the Steak

Generously season both sides of the ribeye steaks with kosher salt and black pepper. Make sure to coat evenly for maximum flavor.

  2. 2

    Bring to Room Temperature

Let the seasoned steaks sit at room temperature for about 30 to 45 minutes before cooking. This helps them cook more evenly.

Cooking

  1. 3

    Heat the Pan

Heat a cast iron skillet or heavy-bottomed pan over high heat until it begins to smoke slightly. This ensures a good sear on the steak.

  2. 4

    Add Olive Oil

Add olive oil to the hot skillet, swirling it around to coat the bottom of the pan.

  3. 5

    Sear the Steak

Place the ribeye steaks in the skillet and sear for about 4-5 minutes on one side without moving them. This develops a nice crust.

  4. 6

    Flip and Add Aromatics (Optional)

Flip the steaks over and add optional ingredients such as fresh rosemary, garlic cloves, and butter to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the steaks with the melted butter.

  5. 7

    Check Internal Temperature

Use a meat thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare.

  6. 8

    Rest the Steak

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.
