Marinade
Method
Marinade Preparation
- 1
Prepare the Marinade
In a bowl, combine the allspice berries, thyme, chopped scotch bonnet pepper, minced garlic, grated ginger, soy sauce, brown sugar, lime juice, vegetable oil, salt, and black pepper. Mix well until all ingredients are evenly blended.
- 2
Marinate the Chicken Wings
Place the chicken wings in a large resealable plastic bag or a bowl. Pour the marinade over the wings, ensuring they are well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Cooking
- 3
Preheat the Oven
Preheat your oven to 400°F (200°C). If using a grill, preheat it to medium-high heat.
- 4
Prepare the Baking Sheet
Line a baking sheet with aluminum foil and place a wire rack on top. This will allow the wings to cook evenly and get crispy.
- 5
Arrange the Wings
Remove the wings from the marinade and shake off excess liquid. Arrange the wings in a single layer on the wire rack.
- 6
Bake the Wings
Bake the wings in the preheated oven for 40-45 minutes, turning halfway through, until the skin is crispy and the internal temperature reaches 165°F (74°C).
- 7
Serve
Once cooked, remove the wings from the oven and let them rest for a few minutes. Serve hot with your favorite dipping sauce, such as blue cheese or ranch.
