Sear the Beef
In a large skillet, heat a bit of oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer to a slow cooker.

Combine in Slow Cooker
Pour the broth mixture over the beef in the slow cooker. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.

Prepare the Rolls
Once the beef is cooked, preheat the oven to 350°F (175°C). Slice the French rolls in half and spread softened butter on the cut sides.

Add Cheese and Beef
Place the buttered rolls on a baking sheet. Layer with slices of provolone cheese and shredded beef from the slow cooker. Use a slotted spoon to avoid excess liquid.

Melt the Cheese
Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven.

Serve with Au Jus
Ladle some of the beef broth into small bowls for dipping. Serve the sandwiches hot with au jus on the side.
