    Marinate the Chicken

    In a bowl, combine the Cajun seasoning, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Add the chicken thighs and coat them well with the spice mixture. Let them marinate for at least 30 minutes.

    Prepare the Vegetables

    Chop the bell pepper, onion, and celery. Mince the garlic cloves.

    Sear the Chicken

    In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the marinated chicken thighs and sear them for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped bell pepper, onion, and celery. Sauté for about 5 minutes until they are tender. Add the minced garlic and cook for an additional 1-2 minutes.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes and chicken broth, scraping up any brown bits from the bottom of the skillet.

    Return the seared chicken thighs to the skillet. Reduce the heat to low, cover, and let it simmer for about 20 minutes until the chicken is cooked through.

    Once the chicken is cooked, serve it over cooked rice and garnish with sliced green onions.
