Chocolate Mousse
Garnish (Optional)
Method
Preparation of Chocolate Mousse
- 1
Melt Chocolate and Butter
In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.
- 2
Separate Eggs
While the chocolate mixture is cooling, separate the egg whites from the egg yolks. Place the egg yolks in a mixing bowl and the egg whites in a clean, dry bowl.
- 3
Mix Egg Yolks and Sugar
Add the granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and slightly thickened.
- 4
Combine Chocolate and Egg Mixture
Slowly pour the melted chocolate mixture into the egg yolk mixture, whisking continuously until well combined.
- 5
Whip Egg Whites
Using an electric mixer, beat the egg whites until soft peaks form. Add a pinch of sea salt and continue to beat until stiff peaks form.
- 6
Fold in Egg Whites
Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
- 7
Whip Heavy Cream
In another bowl, whip the heavy cream until it holds soft peaks.
- 8
Fold in Whipped Cream
Carefully fold the whipped cream into the chocolate mixture until fully incorporated.
- 9
Chill the Mousse
Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
Garnishing (Optional)
- 10
Prepare Garnish
If desired, prepare the garnish by whipping the cream until soft peaks form. You can also prepare dark chocolate shavings and wash fresh berries.
- 11
Serve
Once the mousse is set, serve it chilled topped with whipped cream, dark chocolate shavings, and fresh berries.
