Preparation of Chocolate Mousse

    Melt Chocolate and Butter

    In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Separate Eggs

    While the chocolate mixture is cooling, separate the egg whites from the egg yolks. Place the egg yolks in a mixing bowl and the egg whites in a clean, dry bowl.

    Mix Egg Yolks and Sugar

    Add the granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and slightly thickened.

    Combine Chocolate and Egg Mixture

    Slowly pour the melted chocolate mixture into the egg yolk mixture, whisking continuously until well combined.

    Whip Egg Whites
