Prepare the Summer Squash
Grate the summer squash using a box grater or food processor. Place the grated squash in a clean kitchen towel and squeeze out excess moisture.
Mix the Batter
In a large bowl, combine the grated summer squash, all-purpose flour, eggs, grated Parmesan cheese, baking powder, salt, and black pepper. Mix until well combined.
Heat the Oil
In a large skillet, heat the olive oil over medium heat.
Cook the Fritella
Scoop about 1/4 cup of the batter for each fritella and carefully place it in the hot skillet. Flatten slightly with a spatula. Cook for about 3-4 minutes on each side or until golden brown and crispy.
Drain and Serve
Remove the fritella from the skillet and place on a paper towel-lined plate to drain excess oil. Serve warm with tzatziki sauce.
