Cooking the Pork Chops

Prepare the Pork Chops

Season the Berkshire pork chops with olive oil, salt, and pepper. Let them sit for about 15 minutes to absorb the flavors.

Cook the Pork Chops

Heat a grill or skillet over medium-high heat. Cook the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest.

Making the Caperberry Sauce

Prepare the Sauce

In a saucepan, melt the butter over medium heat. Add the caperberries and sauté for 2-3 minutes. Stir in the lemon juice and chopped parsley. Cook for another minute and remove from heat.

Grilling the Baby Gem Lettuce

Grill the Lettuce

Drizzle the baby gem lettuce with olive oil, salt, and pepper. Grill them cut-side down for about 2-3 minutes until slightly charred. Remove from heat.

Preparing the Pommel Fondant

Cook the Fondant

Peel and cut the potatoes into rounds. In a skillet, melt the butter and add the potatoes. Pour in the vegetable stock, season with salt and pepper, and cover. Cook on medium-low heat for about 20-25 minutes until the potatoes are tender and the liquid is absorbed.

Plating the Dish

On each plate, place a pork chop, a portion of grilled baby gem lettuce, and a serving of pommel fondant. Drizzle the caperberry sauce over the pork chop and serve immediately.
