Preparation

Cooking the Pork Chops

1. Prepare the Pork Chops

Season the Berkshire pork chops with olive oil, salt, and pepper. Let them sit for about 15 minutes to absorb the flavors.

Heat a grill or skillet over medium-high heat. Cook the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest.

In a saucepan, melt the butter over medium heat. Add the caperberries and sauté for 2-3 minutes. Stir in the lemon juice and chopped parsley. Cook for another minute and remove from heat.
