    Prepare the Sauce

    In a large skillet, heat olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

    Brown the Meat

    Add the ground beef and pork to the skillet. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

    Add Wine and Tomatoes

    Pour in the red wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes. Then add the crushed tomatoes, salt, and pepper. Stir to combine.

    Simmer the Ragu

    Reduce the heat to low and let the sauce simmer for 30-40 minutes, stirring occasionally, until thickened. If the sauce becomes too thick, add a splash of water.

    Cook the Pasta

    While the sauce simmers, bring a large pot of salted water to a boil. Add the pappardelle and cook according to package instructions until al dente. Drain and reserve a cup of pasta water.

    Combine and Serve

    Add the cooked pappardelle to the sauce and toss to coat, adding reserved pasta water if needed to loosen the sauce. Stir in the fresh basil and adjust seasoning as necessary.

    Serve

    Plate the pappardelle, top with diced fior di latte cheese, and garnish with additional basil if desired. Enjoy!
