    Prepare the Eggplant

    Slice the eggplants into 1/4-inch thick rounds. Sprinkle salt on the slices and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.

    Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and black pepper.

    Bread the Eggplant

    Dredge each eggplant slice in flour, dip it in eggs, and coat it with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices until golden brown on both sides. Drain on paper towels.

    In a baking dish, spread a layer of tomato sauce. Place a layer of fried eggplant, then a layer of fior di latte cheese, followed by fresh basil. Repeat the layers, finishing with tomato sauce and a generous topping of Parmesan cheese.
