Beef Tenderloin

    Prepare the Beef

    Preheat your oven to 200°C (400°F). Season the beef tenderloin with salt, black pepper, and chopped fresh rosemary. Heat olive oil in a skillet over medium-high heat, sear the beef on all sides until browned, about 3-4 minutes per side.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for about 15-20 minutes for medium-rare, or until it reaches your desired doneness. Remove from oven and let it rest for 10 minutes before slicing.

    Sauté the Mushrooms

    While the beef is roasting, clean and slice the king oyster mushrooms. In a pan, melt butter over medium heat, add minced garlic, and sauté until fragrant. Add mushrooms, season with salt and pepper, and cook until golden brown, about 5-7 minutes.

Pain Perdu

    Prepare Pain Perdu

    In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon. Heat butter in a skillet over medium heat. Dip each slice of bread into the egg mixture and cook until golden brown on both sides, about 2-3 minutes per side.

Porcini Puree

    Make the Porcini Puree

    Soak dried porcini mushrooms in hot water for 20 minutes, then drain. Blend the soaked mushrooms with vegetable broth until smooth. Stir in heavy cream and season with salt and pepper to taste.
