Prepare Taco Filling

Cook the Onions and Garlic
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Brown the Beef
Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned all over, about 5-7 minutes.

Season the Beef
Sprinkle the taco seasoning over the browned beef. Pour in the water and stir to combine. Bring to a simmer and let it cook for about 10 minutes until the mixture thickens slightly.
Assemble Tacos

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Fill the Tacos
Take a warm tortilla and add a generous spoonful of the taco filling. Top with shredded lettuce, diced tomatoes, and shredded cheese.

Add Condiments
Spoon a dollop of sour cream and salsa on top of the filling. Sprinkle with fresh cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top before eating.
