Cook the Ground Beef
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.

Season the Beef
Sprinkle the taco seasoning over the cooked ground beef. Stir well to combine, then add 1/4 cup of water to help the seasoning blend in. Cook for an additional 2-3 minutes until heated through.

Prepare the Tortillas
In a separate dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until soft and pliable.

Assemble the Tacos
On each tortilla, place a portion of the seasoned beef. Top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and slices of avocado.
Rice and Beans

Cook the Rice
In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover and simmer for 18-20 minutes until the rice is tender and the water is absorbed.

Heat the Black Beans
While the rice is cooking, drain and rinse the canned black beans. In a small saucepan, heat the beans over medium heat until warmed through, about 5 minutes. Stir in cilantro and salt for flavor.

Finish the Rice
Once the rice is cooked, fluff with a fork and squeeze in the juice of 1 lime. Mix well to incorporate.
