Sweet Plantain Nachos Recipe

Method

Preparation of Plantains

    Slice the Plantains

    Peel the sweet plantains and slice them diagonally into 1/2 inch thick pieces.

    Heat the Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Caramelize the Plantains

    Once the oil is hot, add the sliced plantains to the skillet. Cook for about 3-4 minutes on each side until they are golden brown and caramelized. Remove them from the skillet and place on a paper towel to drain excess oil.

Assembly of Nachos

    Layer the Plantains

    On a serving platter, arrange the caramelized sweet plantains in a single layer.

    Add Cheese

    Sprinkle 1 cup of shredded pepper jack cheese over the warm plantains.

    Add Toppings

    Top the cheese with 1 cup of diced tomatoes and sprinkle chopped scallions over the top.

    Add Sour Cream

    Serve with a generous dollop of sour cream on the side.

    Cook the Protein (if desired)

    If adding protein, season the steak, chicken, or pork belly with salt, black pepper, and cayenne pepper. Cook on a grill or skillet until fully cooked, then slice thinly and place on top of the nachos before serving.
