    Cook the Chorizo

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the chorizo and cook for an additional 5-7 minutes until browned and cooked through.

    Add Garlic

    Stir in the minced garlic and cook for 1-2 minutes until fragrant. Remove the skillet from heat and set aside.

    Prepare the Cheese

    In a large mixing bowl, combine the Monterey Jack and cheddar cheese. Mix well to ensure even distribution of cheeses.

    Combine Ingredients

    In an oven-safe dish, layer the chorizo mixture evenly on the bottom. Sprinkle the cheese mixture generously over the top of the chorizo.

    Melt the Cheese

    Preheat your oven to 180°C (350°F). Place the assembled dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Once the queso fundido is out of the oven, sprinkle with chopped cilantro and sliced jalapeños (if using). Serve hot with warm tortillas for dipping.
