For the Habanero Fried Chicken

Prepare Chicken
In a blender, combine the habanero peppers and buttermilk. Blend until smooth. Pour this mixture over the chicken breasts in a bowl or resealable bag and marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare Breading
In a large bowl, mix together all-purpose flour, cornstarch, paprika, garlic powder, salt, and black pepper.

Fry Chicken
Heat vegetable oil in a deep frying pan over medium-high heat. Remove chicken from the marinade, allowing excess to drip off, and dredge in the flour mixture until fully coated. Fry the chicken in batches until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels and let rest.

Prepare Mango and Scallions
While the chicken is resting, dice the ripe mango and chop the scallions finely.

Assemble Tacos
In each taco shell, add slices of the habanero fried chicken, followed by diced mango, chopped scallions, and a handful of microgreens.

Finish with Dressing
Drizzle blue cheese dressing over the top of each assembled taco. Serve immediately.
