Prepare the Pork Belly
Preheat your oven to 300°F (150°C).

Season the Pork Belly
Pat the pork belly dry with paper towels. Rub salt, pepper, and cumin all over the pork belly. Drizzle with olive oil and ensure it is evenly coated.

Place the pork belly on a baking sheet, skin side up. Roast in the preheated oven for about 2 to 2.5 hours, until tender. Increase the temperature to 450°F (230°C) for the last 30 minutes to crisp the skin.

Once done, remove the pork belly from the oven and let it rest for 15-20 minutes before slicing.

Prepare the Ingredients
While the pork belly is roasting, prepare the guacamole ingredients. Dice the red onion and tomato, and chop the cilantro leaves.

Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocados with a fork or potato masher until smooth or chunky, depending on your preference.
