Method
Taco Preparation
- 1
Cook Proteins
In a skillet over medium heat, add the ground beef and shredded chicken. Brown the beef until fully cooked, about 5-7 minutes, stirring occasionally. In the last minute, add the taco seasoning and mix well. For the chicken, cook until no longer pink and heated through, about 5-6 minutes. Set aside.
- 2
Warm Tortillas
Wrap the tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for 10-15 minutes until warmed through.
Rice and Beans Preparation
- 3
Cook Rice
In a saucepan, heat the olive oil over medium heat. Add the long-grain rice and toast for 2-3 minutes. Add 2 cups of water and salt, bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.
- 4
Heat Black Beans
While the rice cooks, open the canned black beans and heat them in a small saucepan over medium heat until warmed through, about 5-7 minutes.
Taco Assembly
- 5
Prepare Toppings
Chop the lettuce and prepare the pico de gallo. Set aside in separate bowls.
- 6
Build Your Tacos
Set out the warmed tortillas, cooked proteins, rice, beans, lettuce, pico de gallo, and sour cream. Allow each family member to build their own tacos to their liking.
Churro Preparation
- 7
Make Churro Dough
In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon. In a saucepan, bring 1 cup of water to a boil, then add to the flour mixture. Stir until a dough forms.
- 8
Fry Churros
Heat vegetable oil in a deep pan over medium-high heat. Transfer the dough to a piping bag and pipe 4-6 inch strips into the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
