Preparation

  1. 1

    Prepare the Protein

Choose your protein (chicken, steak, or shrimp). If using chicken or steak, cut into strips. If using shrimp, leave them whole.

  2. 2

    Slice the Vegetables

Thinly slice the white onion, red bell pepper, and poblano pepper. Set aside.

Cooking

  1. 3

    Sauté the Protein

In a large skillet, heat a tablespoon of oil over medium heat. Add the protein and cook until done (approximately 5-7 minutes for chicken and steak; 3-4 minutes for shrimp). Remove from skillet and set aside.

  2. 4

    Cook the Vegetables

In the same skillet, add a little more oil if necessary. Add the sliced onions, red peppers, and poblano peppers. Sauté until the vegetables are softened, about 5 minutes.

  3. 5

    Combine with Salsa

Return the cooked protein back to the skillet with the sautéed vegetables. Add the salsa roja, tequila, and lime juice. Stir to combine and cook for an additional 2-3 minutes until everything is heated through and well mixed.

Assembly

  1. 6

    Prepare the Tacos

Warm corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

  2. 7

    Assemble the Tacos

On each tortilla, place a handful of romaine lettuce, followed by a generous portion of the protein and vegetable mixture. Top with cilantro, guacamole, and a dollop of sour cream.

  3. 8

    Serve

Serve immediately with any extra salsa on the side.
