Prepare the Chicken Filling
In a mixing bowl, combine the shredded cooked chicken with cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Mix well to ensure the chicken is evenly coated with the spices.

Assemble the Taquitos
Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until they are pliable. Place about 2 tablespoons of the chicken mixture and a sprinkle of shredded cheese in the center of each tortilla. Roll the tortillas tightly to form taquitos.

Cook the Taquitos
In a large skillet, heat olive oil over medium-high heat. Once hot, add the rolled taquitos seam-side down in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side until they are golden brown and crispy. Remove and place on a paper towel-lined plate to drain any excess oil.

Serve the Taquitos
On a serving platter, create a bed of shredded romaine lettuce. Arrange the crispy taquitos on top. Serve with salsa verde, sour cream, and guacamole on the side for dipping.
