    Prepare the Shrimp

    In a medium pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pot and cool them under cold running water. Once cooled, chop the shrimp into small pieces.

    Chop the Vegetables

    Finely chop the red onions and tomatoes. Rinse the cilantro under cold water, pat dry, and chop it roughly.

Mixing

    Combine Ingredients

    In a large mixing bowl, combine the chopped shrimp, red onions, tomatoes, and cilantro.

    Add Lime Juice and Tabasco

    Pour the lime juice over the shrimp and vegetable mixture. Add Tabasco sauce to taste and gently mix to combine all ingredients.

Chill and Serve

    Chill the Ceviche

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

    Once chilled, serve the ceviche with tortilla chips on the side for dipping.
