Directions
- 1
Prepare the Filling
In a large mixing bowl, combine the cooked rice, black beans, shredded cheese, and the cooked chicken (or ground beef). Season the mixture with salt and black pepper to taste. Mix well until all ingredients are evenly combined.
- 2
Warm the Tortillas
In a skillet over medium heat, warm the large flour tortillas for about 30 seconds on each side, just until they are pliable. This will make it easier to wrap the burritos.
- 3
Assemble the Burritos
Lay a warm tortilla flat on a clean surface. Spoon about 1/4 of the filling mixture into the center of the tortilla. Top with a dollop of sour cream, a spoonful of salsa, and a sprinkle of chopped cilantro.
- 4
Wrap the Burrito
Fold the sides of the tortilla inwards, then roll the bottom of the tortilla up over the filling. Continue rolling tightly until the burrito is completely wrapped. Repeat with the remaining tortillas and filling.
- 5
Serve
Cut the burritos in half if desired, and serve with lime wedges on the side. Enjoy your delicious burritos!
