Marinating the Pork

    Prepare the Marinade

    In a blender, combine pineapple juice, white vinegar, dried chilies, garlic cloves, ground cumin, oregano, salt, and black pepper. Blend until smooth.

    In a large bowl, place the thinly sliced pork shoulder and pour the marinade over the meat. Make sure all pieces are well coated. Cover and refrigerate for at least 4 hours, ideally overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or stovetop skillet over medium-high heat. Remove the pork from the marinade and discard the marinade. Grill the pork slices for about 3-4 minutes per side, or until they are cooked through and have nice char marks. Remove from heat and let rest for a few minutes.

    Once rested, chop the grilled pork into small, bite-sized pieces.

Assembling the Tacos

    Warm the Tortillas

    In a skillet, warm the corn tortillas over medium heat for about 30 seconds on each side or until pliable.

    Place a generous amount of the chopped pork on each tortilla. Top with chopped onion, cilantro, and a drizzle of your favorite salsa. Serve with lime wedges on the side.
