Crust Preparation

    Make the Pie Crust

    In a large bowl, combine the all-purpose flour, sugar, and salt. Add the chilled, diced butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Sweet Potatoes

    In a large pot, bring water to a boil. Add the sweet potato cubes and cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Prepare the Filling

    In a mixing bowl, mash the sweet potatoes until smooth. Add the brown sugar, granulated sugar, eggs, evaporated milk, vanilla extract, cinnamon, and nutmeg. Mix until well combined.
