Preparation

    Chop Vegetables

    Peel and chop the carrots, celery, onion, and potatoes into small, even-sized pieces. Mince the garlic and set aside.

    Prepare Tomatoes

    If using whole tomatoes, chop them into small pieces. If using canned tomatoes, simply crush them with your hands.

Cooking

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, celery, and garlic. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Add Tomatoes and Broth

    Stir in the chopped tomatoes and cook for an additional 3-4 minutes. Then, add the vegetable broth to the pot and bring to a boil.

    Season the Soup

    Once boiling, add the chopped potatoes, thyme, bay leaf, salt, and black pepper. Reduce heat to a simmer and let cook for 20-25 minutes, or until the potatoes are tender.

Serving

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls and serve hot with slices of crusty bread on the side.
