Method

Preparation of Eggs

  1. 1

    Boil the Eggs

Place the large eggs in a saucepan and cover them with cold water. Bring the water to a rolling boil over medium-high heat.

  2. 2

    Cook the Eggs

Once boiling, cover the saucepan with a lid, remove from heat, and let the eggs sit for 12 minutes.

  3. 3

    Cool the Eggs

After 12 minutes, transfer the eggs to a bowl of ice water using a slotted spoon. Allow them to cool for about 5 minutes.

  4. 4

    Peel the Eggs

Gently tap the eggs on a hard surface to crack the shell, then peel under running water to make it easier.

Making the Filling

  1. 5

    Prepare the Egg Yolks

Slice the peeled eggs in half lengthwise and carefully remove the yolks, placing them in a mixing bowl.

  2. 6

    Mix the Filling

To the bowl with the yolks, add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, paprika, chopped chives, and bacon bits. Mash and mix until smooth and well combined.

Assembling the Stuffed Deviled Eggs

  1. 7

    Fill the Egg Whites

Using a spoon or a piping bag, fill the hollows of the egg whites with the yolk mixture.

  2. 8

    Garnish the Eggs

Sprinkle the filled eggs with paprika and top with additional chopped chives for garnish.

Serving

  1. 9

    Serve the Eggs

Arrange the stuffed eggs on a serving platter and enjoy them chilled or at room temperature.
