Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) to prepare for baking the casserole.

  2. 2

    Prepare the Vegetables

Wash and slice the yellow squash and zucchini into thin rounds. Dice the onion and mince the garlic.

  3. 3

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes). Then add the yellow squash and zucchini, cooking for an additional 5-7 minutes until softened. Season with salt, black pepper, and paprika.

    Mix the Ingredients

In a large mixing bowl, combine the sautéed vegetables, sour cream, milk, eggs, and 1 cup of cheddar cheese. Stir until well combined.

  2. 5

    Prepare the Casserole Dish

Lightly grease a 9x13 inch casserole dish with cooking spray or a bit of olive oil.

  3. 6

    Layer the Casserole

Pour the vegetable mixture into the prepared casserole dish. Spread evenly, then top with the remaining 1 cup of cheddar cheese and the bread crumbs.

Baking

  1. 7

    Bake the Casserole

Place the casserole in the preheated oven and bake for 30-35 minutes or until the top is golden brown and bubbly.

  2. 8

    Cool and Serve

Remove the casserole from the oven and let it cool for 5-10 minutes before serving. Enjoy your delicious squash casserole!
