Preparation of Turkey

    Prepare the Turkey

    Preheat your oven or smoker to 325°F (165°C). Rinse the turkey under cold water and pat dry with paper towels. Remove giblets and neck from the cavity.

    Season the Turkey

    Rub salt, black pepper, and olive oil (or melted butter) all over the turkey, including under the skin. Stuff the cavity with fresh herbs, quartered onion, garlic, and lemon.

    Roasting or Smoking

    Place the turkey on a roasting rack in a roasting pan. Cook in the oven or smoker for about 13-15 minutes per pound or until the internal temperature reaches 165°F (74°C).

Preparation of Cornbread Dressing

    Cook Vegetables

    In a skillet, sauté the diced celery and onion in a little olive oil over medium heat until softened, about 5-7 minutes.

    Mix Dressing Ingredients

    In a large bowl, combine the crumbled cornbread, sautéed vegetables, beaten eggs, broth, salt, pepper, sage, and thyme. Mix until well combined.

    Bake Dressing

    Transfer the dressing mixture to a greased baking dish and bake at 350°F (175°C) for 30-40 minutes, or until the top is golden and crispy.

    Once the turkey is done, let it rest for 20-30 minutes before carving. Serve with the cornbread dressing on the side.
