    Preheat your oven to 375°F (190°C).

    Prepare the Potatoes

    Peel and thinly slice the russet potatoes using a mandoline or a sharp knife. Aim for about 1/8 inch thickness.

    Dice the medium onion into small pieces.

    In a saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for about 1 minute until bubbly. Gradually whisk in the heavy cream, adding it slowly to avoid lumps. Continue whisking until the mixture thickens, about 5 minutes.

    Add salt, black pepper, and garlic powder to the cream sauce. Stir well to combine.
