    Soak the Beans

    Rinse the red beans under cold water and soak them in a large bowl of water for at least 8 hours or overnight.

    Prep the Ingredients

    Chop the onion, bell pepper, celery, and mince the garlic. Slice the sausage into bite-sized pieces.

Cooking

    Cook the Sausage

    In a large pot or Dutch oven, add the sliced sausage over medium heat. Cook until browned, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, bell pepper, and celery. Sauté until softened, about 5 minutes. Add minced garlic and sauté for another minute until fragrant.

    Combine Ingredients

    Drain the soaked beans and add them to the pot along with the chicken broth, bay leaves, Cajun seasoning, black pepper, and the cooked sausage. Stir well.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary.

    Season and Serve

    Once the beans are tender, taste and adjust seasoning with salt as desired. Remove bay leaves. Serve hot, garnished with chopped green onions.
