    Wash, peel, and slice the fresh peaches into thin wedges. You should have about 4 cups of sliced peaches.

    In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, ground cinnamon, and cornstarch. Toss gently to coat the peaches with the mixture. Let sit for about 15 minutes to allow the juices to release.
