Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a rolling boil. Add 1 teaspoon of salt to the boiling water.

    Cook Spaghetti

    Add 8 cups of spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the spaghetti in a colander and reserve about 1 cup of the pasta water.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, chop the bell pepper, zucchini, carrot, and halve the cherry tomatoes. Set aside the broccoli florets.

    Sauté Vegetables

    In a large skillet, heat 4 tablespoons of extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped vegetables and broccoli florets to the skillet, cooking for about 5-7 minutes until tender.

Combining Ingredients

    Combine Pasta and Vegetables

    Add the drained spaghetti to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water a little at a time if needed to help combine.

    Season and Serve

    Season with black pepper to taste. Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil. Serve warm.
